  1. Grated Sweet Potato and Jalepeno Casserole

    - 3-4 grated sweet potatos (I used my food processor)
    - 4 chopped green onions
    - 2 diced jalepenos (or to your own taste, I like it spicy)
    - mist of olive oil
    - salt, pepper, oregano, basil

Spread grated potatos out in a casserole dish, mist with olive oil. Top with green onions and jalepenos, spice with salt, pepper, oregano, and basil. Bake in oven on 400 for about 25 minutes or until soft. Stir once around the 10-15 minute mark.
